Can you make black garlic at home? Yes. You do not need special equipment. A slow cooker, rice cooker, or warm oven will work. The process takes 2–3 weeks, but the active work is only about 10 minutes. Here is the simplest method for how to make black garlic at home.

How to Make Black Garlic at Home (No Special Equipment Needed)

Black garlic looks like something you would buy in a specialty store. It is dark, soft, and slightly sweet. It seems like it requires professional equipment. It does not. You can make it at home with a slow cooker, a rice cooker, or even a warm oven. The process is simple: keep garlic warm and humid for 2–3 weeks. That is it.

What you need

  • Fresh garlic. Whole heads, not peeled cloves. Hardneck or softneck both work. Choose firm, tight heads with no soft spots.
  • A slow cooker, rice cooker, or oven. It needs to hold a steady low temperature (around 60°C / 140°F) for 2–3 weeks.
  • Aluminium foil or parchment paper. To wrap the garlic and keep the moisture in.
  • A ventilated space. The garlic will smell strong during the first few days. Put the cooker in a garage, laundry room, or balcony if possible.
  • Patience. The active work is 10 minutes. The waiting is 2–3 weeks.

Step-by-step method for how to make black garlic

Step 1: Prepare the garlic

Do not peel the garlic. Leave the heads whole with the skin on. Remove any loose outer paper, but keep the head intact. If the roots are very dirty, brush them off — do not wash.

Step 2: Wrap the heads

Wrap each garlic head individually in aluminium foil, or place them all in a foil-lined container and cover with another layer of foil. The goal is to keep moisture in and keep the garlic from drying out.

Step 3: Set the temperature

  • Slow cooker: Set to "low" or "keep warm." If your slow cooker runs hot, prop the lid open slightly with a wooden spoon to let some heat escape.
  • Rice cooker: Use the "keep warm" setting. Check after the first hour to make sure it is not too hot.
  • Oven: Set to the lowest temperature (usually 60–70°C). Leave the door slightly ajar if your oven runs hot.

Step 4: Wait

Leave the garlic in the cooker for 2 to 3 weeks. Check every few days. If the garlic looks dry, add a small splash of water to the container (not directly on the garlic) to maintain humidity. If it smells burnt, your temperature is too high — lower it.

Step 5: Cool and store

When the garlic is dark, soft, and slightly sweet, take it out and let it cool. Peel and eat, or store in a sealed jar in the fridge. Homemade black garlic keeps for several months in the fridge.

Troubleshooting: what can go wrong

Problem Cause Fix
Garlic is dry and hard Not enough humidity Add a small dish of water inside the container
Garlic smells burnt Temperature too high Lower the heat, prop the lid open
White mould on the garlic Too much moisture, not enough airflow Discard the mouldy heads. Open the lid briefly every few days next time
Garlic is still white after 3 weeks Temperature too low Raise the temperature slightly and continue for another week

How to tell it is ready

Black garlic is ready when:

  • The cloves are jet black — not dark brown, but fully black.
  • The texture is soft and sticky — like a dried fruit, not hard or crunchy.
  • The smell is sweet and slightly tangy — not sharp like raw garlic.
  • The taste is mild and molasses-like — with a hint of balsamic.

If it is still white or hard in the centre, it needs more time. Put it back and check again in a few days.

How to use your homemade black garlic

  • Eat it straight. Peel and eat 1–2 cloves a day.
  • Add it to soups and stews. It dissolves into the broth and adds a mild sweetness.
  • Mash it into dressings and sauces. It works well in vinaigrettes and marinades.
  • Spread it on toast or crackers. Like a savoury jam.

If you do not want to wait 2–3 weeks, you can also buy ready-made black garlic. See our black garlic here.
